Makes 250g herb butter
250g butter at room temperature
1 tablespoon finely chopped chives
4 garlic cloves, finely chopped
Zest of 1/2 lemon
Pinch Cayenne pepper
1 tablespoon Dijon mustard
1 tablespoon chopped parsley
1 tablespoon chopped rosemary
Whisk all the ingredients together and spoon the butter onto wax paper. Shape the butter neatly into one or more portions.
Tip
Add chilli, thyme or other herbs to the butter.
